A single variety apple juice made from Bardseys (a Welsh variety: the original tree grows on Bardsey Island (Ynys Enlli), pasteurised for long term keeping; alongside, apple syrup made by reducing (boiling down) sweet apple juice by a factor of about six: that 1/2 litre of syrup resulted from boiling down 3 litres of juice.
Some friends who have sampled the syrup are initially struck by the sweetness; for others, the “first hit” is its intense flavour.
Hope to have the woodburning stove back in commission soon: would rather use my own firewood instead of mains electricity to pasteurise or reduce future juice batches!
